1. Season the chicken with salt, black pepper, and grated garlic.
2. Slice the onion and red bell pepper thinly. Cut the zucchini and eggplant into quarters lengthwise, then slice into 1cm pieces. Remove the stems from the cherry tomatoes and cut them in half.
3. Heat 1 tablespoon of salad oil in a deep frying pan or pot, quickly sauté the cherry tomatoes, and set them aside.
4. Add the remaining salad oil to the pan, and sauté the chicken over low heat until it changes color. Add the vegetables from step [2] and continue to sauté over medium heat until they are well coated with oil.
5. Add water and the bay leaf, and simmer over medium heat for about 10 minutes, skimming off any foam. Turn off the heat, break the curry roux into pieces, and stir it in until dissolved. Simmer again over low heat until the curry thickens.
6. Serve the curry over white rice in a bowl, and top with the sautéed cherry tomatoes from step [3].
*If you want it spicier, try adding garam masala.
