The Smoky Scent of Katsuobushi and the Umami of Urume Iwashi and Niboshi Sardines
By adding the umami of urume iwashi (round herring) and niboshi sardines to the smoky-scented katsuobushi made specifically for "Mentsuyu," we have created a broth with a rich aroma and umami.
Specially Made Kaeshi
Like the broth used in soba shops, "Mentsuyu" is crafted by perfectly balancing the "dashi" and "kaeshi." Kaeshi is a mixture of soy sauce heated with sugar and seasonings to meld the flavors. At Yamaki, we create a special kaeshi just for "Mentsuyu" to enhance the aroma, flavor, and umami of the dashi.
