The blend of the clean aroma of katsuobushi and the strong umami and richness of sodabushi elevates the flavor of "Mentsuyu."

The Smoky Scent of Katsuobushi and the Umami of Urume Iwashi and Niboshi Sardines

By adding the umami of urume iwashi (round herring) and niboshi sardines to the smoky-scented katsuobushi made specifically for "Mentsuyu," we have created a broth with a rich aroma and umami.
